Tasting Notes: Medium body, with notes of cedar and milk chocolate
From the jagged mountains of the volcanic region of Chiapas in southern Mexico, we’ve sourced this delicately bright and balanced coffee that gets harvested between November to March. Here, the coffee plants mature more slowly through the season (unlike that beach tan), which adds density to the beans and means greater acidity and sweetness in the final cup. In these shady mountains, before 10 am, no matter what the question is, the answer is always coffee.
